Here is one of my few go to recipes that is always a hit and created
by me. It is pretty low in fat, juicy and just the right mix of flavors.
Ingredients:
1lb skinless boneless chicken cit into four pieces
1/3c grapes cut in half
1/3c pecan nut pieces
1/3c celery diced
1/3c of onion diced
1/4c non fat, plain Greek yogurt
3tbs of ground mustard
3tbs yellow mustard
1tsp oregano
3tbs salt
1tbs of whole peppercorns
2 slices of onion
1. Poach the chicken
Here is a brief tutorial on how to poach chicken. Poaching keeps the chicken juicy and lean without making it rubbery.
-Put the salt, peppercorns and slices of onions in a large deep skillet with the chicken and enough water to cover the chicken. Bring to a boil. Reduce to a simmer and cover for 5 minutes. Turn off the heat and let sit for 15 minutes to ensure it is thoroughly cooked.
2. Let chicken cool then cut into small cubes.
3. Mix the rest of the ingredients, add the chicken.
Splurge on your favorite bread, mine is either rye or sourdough.
Goes great with green iced tea as well
